Balsamic Roasted Tomatoes

This is the first of – hopefully – many meals ideas that are designed to be so quick and simple that you couldn’t even call them a recipe. Just grab the ingredients and put everything together – that’s the idea here. Some evenings we’re just too busy to slave over a cooker and spend an hour putting together a meal – so these are for when you just want to grab something quickly but still want to enjoy good food.

When you want something quick and with minimal effort, you can’t go wrong with roasting veggies in the oven and this is especially true of tomatoes. All you need to do for this dish is to slice up a bunch of tomatoes, pop them into a roasting tin and drizzle with olive oil, balsamic vinegar and season with salt, pepper, oregano and some chilli flakes if you fancy a bit of a kick. Then place into the oven at 200°C/400°F/Gas Mark 6 for 30 minutes and then serve with fresh basil and your accompaniment of choice. I went for having them on toast because, well, I’m British and we bloody love putting stuff on toast.

You will need:

  • Tomatoes (the nicer the better)
  • Balsamic Vinegar
  • Olive Oil
  • Sea Salt
  • Cracked Black Pepper
  • Chilli Flakes (Optional)
  • Fresh Basil
