Breaded Prosciutto Chicken Breast stuffed with Stilton

Breaded chicken breasts, chicken breasts stuffed with stilton, chicken breasts wrapped in Prosciutto… I have made all of these many times over the years but I thought “what about if you did them all at once?” So I did! The result is an indulgent dish, but simple, dish that looks impressive and can be made on a weeknight for yourself or as the basis of a meal to serve to your friends and family. Of course, if you’re not a fan of stilton, you could use any cheese that you like, or simply leave it out.

Ingredients

  • 2 x Chicken Breasts
  • 180g Prosciutto
  • 100g Stilton
  • 150g Breadcrumbs
  • 4tbsp Plain Flour
  • 2 x Medium Eggs
  • 1tsp Salt
  • 2tsp Pepper

Pre-heat an oven to 200°C (190°C Fan)/390°F/Gas Mark 6.

Take the chicken breasts and cut into the side of them to create a pocket for your cheese. Make it as deep and as wide as you can, but you don't want to cut all the way through the chicken breasts, nor do you want to cut the entire length of the chicken breast.

Now wrap the chicken breasts in the strips of prosciutto, covering the chicken breasts entirely but making sure to completely cover the pocket where you added the cheese in order to seal it up and stop the cheese from leaking out during cooking.

Take three separate dishes or bowls of the same size and in one dish crack the eggs and beat them until they're completely combined. Then add the flour in another dish and the breadcrumbs into the last dish.

Dip the prosciutto-wrapped chicken into the flour, coating completely, and shake off any excess.

Next, dip the chicken into the egg to coat it, and then let any excess drip off.

Finally, dip the chicken into the breadcrumbs and coat the chicken breast completely. I would recommend doing this twice, so dip back into the egg and then back into the breadcrumbs to double coat it. This makes sure that the chicken is completely coated and gives it a lovely extra crunch.

Once all chicken breasts are coated, place onto a baking tray lined with baking paper to prevent sticking, and place into the oven for 25 - 30 minutes. Serve with the accompaniments of your choice.
