As a lover of both sandwiches and spicy, cajun flavours this combination makes absolute sense to me. It’s quick, it’s easy and very tasty. If you have time to let the chicken marinade in the spices then all the better, otherwise you can cook this straight away. I like to serve it in a ciabatta along with a garlic and herb mayo along with some nice, fresh salad veggies to compliment the spicy chicken including baby spinach, tomato, and cucumber to give a nice crunch.
Cajun Chicken Sandwich

- For the Chicken:
- 1 x Chicken Breast
- 2 tsp Smoked Paprika
- 1 tsp Hot Chilli Powder
- 1 tsp Cayenne
- 1 tsp Cumin
- 1 tsp Salt
- 1 tsp Ground Black Pepper
- 1 tsp Thyme
- 1 tsp Oregano
- 1 tsp Garlic Powder
- ½ tsp Chilli Flakes (Optional)
- 3 tbsp Vegetable Oil
Instructions
Take a chicken breast and pop it into a strong, plastic food bag and then, using a rolling pin or bottom of a frying pan, flatten down the chicken breast to about a half inch thick.
Now pop all the herbs and spices and a tablespoon of the oil into the bag along with the chicken, seal the bag and rub everything into chicken so it's well coated all over.
Now, if you've got time, place the chicken breast into the fridge and allow to marinade in the spices for a couple of hours.
Pop a frying pan onto the medium-high heat and add two tablespoons of oil to the pan to heat up.
Place the chicken breast into the pan and cook for 4 minutes on each side - 8 minutes in total - until the chicken is nicely cooked and the spices have a nice charr on them.
Remove from the pan and leave to rest for a couple of minutes, then serve in really a nice roll or bread with your choice of salad and dressing.
