Cookies are brilliant. Not only are they super tasty, but they’re super simple to make and take next to no time at all. These Double Chocolate Chip cookies are especially tasty – they’re chewy in the middle, crunchy on the outside, and almost brownie-like in flavour and texture. Their simplicity means you can have them in less than 20 minutes, and they’re brilliant if you’re looking to get into baking or are looking to bake with kids. It’s quite possibly the perfect cookie!
Easy Double Chocolate Cookies

- 250g Plain Flour
- 115g Unsalted Butter, melted
- 200g Soft Light Brown Sugar
- 200g Caster Sugar
- 2 x Eggs
- 100g Dark Chocolate Chips
- 60g Cocoa Powder
- 1/2 Tsp Salt
- 1/2 Tsp Baking Power
Instructions
Pre-heat the oven to 180°C/375°F/Gas Mark 5.
Melt the butter in the microwave for 30 seconds in 10 second bursts.
Place into a bowl and mix with both sugars until all lumps are out and it's well combined.
Crack in both eggs and combine those as well.
Add in all the dry ingredients - including the chocolate chips - and combine well until it forms a dough.
Using a ice cream scoop, portion out 5 or 6 equal balls onto a large baking tray - making sure to space them well apart - and press down on top lightly with the back of a fork.
Bake in the oven for 8 to 10 minutes.
Leave to cool on the tray for a couple of minutes, before transferring to a wire rack to cool completely.
