Halloumi and Aubergine are two things that I really enjoyed, but I never really thought to have them together until recently when I saw a recipe on Sorted Food doing something very similar, so this dish is inspired by that. This recipe is extremely simple, and very, very quick and is great paired with things like Couscous, Quinoa, Freekeh or, as I decided to do, Gnocchi.
This recipes simply requires you to brush the aubergine and halloumi with a honey, ginger and smoked paprika coating, and then fry them in a very hot pan to give them a lovely sweet, smokey chargrilled flavour. It’s really simple to do, and great for if you’re in a hurry but still want something delicious.
Honey Ginger Halloumi & Aubergine

- 250g Halloumi
- 1 x Aubergine
- 2 tbsp Honey
- 1 tbsp Olive Oil
- 30g Fresh Ginger
- 1½ tsp Smoked Paprika
- ½ tsp Cayenne
Instructions
Peel and finely grate the ginger, and combine in a bowl with the honey, olive oil, smoked paprika and cayenne.
Remove the halloumi from the packaging, and dry it off using some paper towel. Cut it into even slices, about 1cm thick.
Chop the aubergine into even slices as well, again about 1 - 2 cm.
Place a frying pan - preferably a griddle pan - onto a high heat, and then brush one side of each piece of the aubergine with the honey coating and place into the frying pan and fry for 2 minutes, then brush the other side with the coating and turn over and fry again for 2 minutes.
Remove the aubergine from the pan and place to one side, and then do the same thing for the Halloumi - brush one side of the slices with the honey coating, and then fry on a high heat for 30 seconds to a minute, brush the other side and turn over and fry again for 30 seconds to a minute.
Serve with your choice of accompaniment, and drizzle with a little more honey.
