Oven-Baked BBQ Ribs

I want my baby back baby back baby back… ribs!

Kudos if you remember if get the film reference there. Or not, because it wasn’t that good really was it? ANYWAY, this recipe was borne out of the need for something simple, not too much effort, but feels like a treat and is super tasty, and there are fewer things tastier than BBQ Ribs!

Usually I would slow cooker or even smoke BBQ ribs, but this time I didn’t want to mess around with too many appliances. So I used the good old, reliable oven! I even had time to throw together a quick coleslaw!

Oven-Baked BBQ Ribs

Serves: 2 Cooking Time: approx 3 hours

Ingredients

  • For the ribs:
  • A rack of Pork Loin Ribs (Baby Back Ribs)
  • 1 Tbsp Smoked Paprika
  • 1 Tsp Ground Cumin
  • 1 Tsp Onion Granules
  • 1 Tsp Garlic Granules
  • 1 Tsp Cayenne Pepper
  • 1 Tsp Mustard Powder
  • 1/2 Tsp Salt
  • 1 Tsp Black Pepper
  • 2 Tbsp Soft Dark Brown Sugar
  • For the glaze:
  • 3 - 4 Tbsp BBQ Sauce
  • 2 Tbsp Honey
  • 330ml Coca-Cola
  • For the coleslaw:
  • 2 x Carrots
  • 1 x Red Onion
  • 1/4 of a White Cabbage
  • 3 Tbsp Mayonaisse
  • 2 Tbsp Creme Fraiche
  • 1 Tbsp Caster Sugar
  • Juice of a Lemon

Instructions

Pre-heat oven to 120°C/250°F/Gas Mark 0.5

Mix all of the spices into a bowl, and then rub all over the ribs on both sides

Wrap well in foil and place onto a baking tray and then bake in the oven for approximately 3 hours

While the ribs cook, you can make the glaze by combining together the BBQ sauce, honey and coca-cola in a pan over a medium-high heat and simmering for 10 - 12 minutes

For the coleslaw, finely shred or grate the vegetables either in a food processor, with a grater or using good knife skills

Place the veg into a bowl, and add in the mayo, creme fraiche, lemon and sugar and combine together well

Once the ribs have baked, remove from the oven and open up the foil then brush the BBQ glaze over them well

Place under a low grill for 7 - 8 minutes until the glaze starts to char slightly

Brush with a little more glaze and then serve with the coleslaw and whatever else you fancy!
