I love cheesecake, and I love making cheesecake, but because – at the time of writing – I live by myself it’s not always practical to make a whole cheesecake. So that’s why I decided to make these quick, 30-minute cheesecakes which can be individually portioned into glasses! It’s got all the elements of a classic no-bake cheesecake in a fraction of the time – it’s consistency may be a little different, but it’s got that wonderful flavour that will scratch your cheesecake itch for sure!
Quick 30-Minute Cheesecake

- 200g Full Fat Cream Cheese
- 100ml Sour Cream
- 6 - 8 Tbsp Icing Sugar
- 2 Tsp Vanilla Extract
- 150g Digestive Biscuits
- 50g Butter, melted
Instructions
Crush (or blitz) the biscuits into fine crumbs
Melt the butter and mix into the biscuits
Press the biscuit crumbs into the bottoms of two glasses and compact as much as you can
In a bowl mix together the cream cheese, sour cream, icing sugar and vanilla extract until well combined.
Divide the mixture into the two glasses evenly.
Place into the fridge to set for at least 15 to 20 minutes and enjoy!
