Scrambled Egg & Avocado on Toast

Scrambled egg on toast is a classic combination, and avocado is so popular these days that hipsters have kind of made them into a bit of a running joke, but let’s put that to one side because avocados, while by themselves are a bit bland, are pretty versatile and full of very good oils and they, to me, have become a natural companion to egg, which I’ll demonstrate in the first of two egg and avocado toast recipes.

This one takes scrambled egg, and takes it up a level by adding creme fraiche and spring onion into the mix which gives it a wonderful richness and creaminess and a lovely, fresh flavour. Throw in the avocado you have a great, filling breakfast.

An important point about avocados is that you absolutely have to add salt to them. Without the salt, they’re rather bland, but adding salt absolutely transforms and brings out all of the flavours of the oils.

Scrambled Egg & Avocado on Toast

Ingredients

  • 3 Eggs
  • Bunch of Spring Onions
  • 2 tbsp Creme Fraiche
  • 1 Ripe Avocado
  • 1 tsp Sea Salt
  • 1 tsp Ground Black Pepper
  • 2 Slices of Bread

Crack three eggs in a bowl, add a splash of milk, a little salt and pepper, and then whisk with a fork until fully combined. Chop the spring onions.

Peel and de-stone the avocado, and then dice into cubes. Add into a bowl, and add a teaspoon of sea salt and a teaspoon of black pepper, and then mash with a fork until it's smoother but still with some good chunks of avocado.

Add a knob of butter to a frying pan over a medium heat. When the butter starts to foam, add in the eggs and turn up the heat to medium-high.

Stir the eggs using a spatula and continuously stir the eggs until they start to cook.

Remove the pan from the heat and keep stirring the eggs with the spatula. Take a moment to toast your bread, I went for a couple of slices of sourdough bread.

Alternate between cooking the eggs on and off the hob until the eggs are almost fully cooked. Remove from the heat, and stir in the creme fraiche until the eggs are creamy and add in the spring onions.

Butter the toast, spread over the avocado, and then spoon the eggs over the avocado. Enjoy!
